Damascus Kitchen Knives: Chef Knife, Cleaver or Set?
If you're buying one Damascus kitchen knife, make it a chef's knife. It handles most slicing, chopping and dicing. Add a cleaver only if you regularly break down meat and soft bone. Choose an ulu if you like a rocking chop for herbs, vegetables or pizza. A five-piece set makes sense when you want a matched set that covers heavy chopping, boning and small detail work in one purchase.
Start with how you cook

- Mostly vegetables, boneless meat and everyday prep: a chef's knife.
- Whole chickens, ribs, large cuts with soft bone: add a cleaver.
- Lots of herbs, chopped salads or pizza: an ulu is quick and easy to control.
- Setting up a kitchen or buying a gift: a five-piece set.
Chef knife
A chef's knife has a long, fairly wide blade with a curve toward the tip. That curve lets you rock the knife on the board for fast, precise cuts. Chef's knives are most commonly about 6 to 10 inches long in the blade. It is the one knife that does most jobs well: slicing, chopping, dicing and mincing.

Cleaver
A cleaver is a heavy, usually rectangular knife for splitting meat and soft bone. It works by momentum. You swing it rather than slice with it, and its thick blade and deliberately blunter edge are built to take that impact. It isn't a substitute for a chef's knife. A thin Chinese-style "vegetable cleaver" is a different, general-purpose tool.
A cleaver is included in both of our five-piece Damascus sets (see below). Use it on a sturdy board. Cleavers are meant for meat and soft bone.
5-piece set
We offer two handmade Damascus chef knife sets: the set with Pakka wood handles and the set with rosewood handles. Each comes with a leather roll or pouch. Sizes are quoted exactly as listed.
| Set with Pakka wood handles | Set with rosewood handles | |
|---|---|---|
| Chef knife | 12.5 in | 13 in |
| Cleaver | 12.5 in | 11.5 in |
| Boning knife | 11 in | 11 in |
| Paring knife | 9 in | 9 in |
| Fifth knife | Butcher knife, 13 in | Bread knife, 13 in |
| Handle material | Red Pakka wood | Rosewood |
| Set weight | 2.87 lb / 1.3 kg | 2.64 lb / 1.2 kg |
What each piece is for:
- Boning knife: a narrower blade for removing bones and trimming meat and fish.
- Paring knife: the small knife for peeling and detail work.
- Bread knife (rosewood set): a serrated edge that cuts through crust without crushing the loaf.
- Butcher knife (Pakka set): for cutting large pieces of meat and poultry.
Choose the Pakka set if you cook a lot of meat and want the lower-maintenance handle. Choose the rosewood set if you bake bread. Both are in the chef knife set collection.
Ulu
The ulu is a traditional all-purpose knife of Inuit, Iñupiat, Yupik and Aleut women. Its curved blade centers your force over the middle of the edge. A rocking motion pins the food to the board while you cut, which makes it quick for herbs, vegetables and pizza. Our listings describe our ulus as handmade Damascus with a leather sheath. For example, the Premium Ulu Knife (camel bone and bull horn handle) and the Handmade Pizza Cutter Ulu Knife (rosewood handle) are each listed at 6 inches overall with a 5-inch blade.

Kitchen care for Damascus
Damascus kitchen knives need a little more attention than a stainless knife in the dishwasher:
- Hand wash only. This protects both the blade and wooden handles, which can warp if soaked or machine-washed.
- Dry straight away, blade and handle, before putting the knife away.
- Oil the blade lightly now and then with a food-safe mineral oil to prevent rust.
- Don't store the knives damp in the leather roll or sheath. Let everything dry fully first.
This matches the care guidance in our listings. The rosewood set, for example, says: "Hand wash only. Wipe dry after use, apply a light coat of food-safe mineral oil to the blade periodically to prevent rust."
